What is a flavourist?

A flavourist (spelled "flavorist" in the US) is a specialist scientist who creates the flavour formulations used in food, beverage, nutraceutical and oral care products. Working in flavour houses and ingredient manufacturers, they combine chemistry, sensory science and market knowledge to recreate or enhance natural tastes.

Senior flavourists usually specialise in one or more categories:

• Beverage: soft drinks, juices, alcoholic and functional drinks
• Sweet: confectionery, bakery and dairy
• Savoury: snacks, sauces and prepared foods
• Oral care: toothpaste and mouthwash

Because training takes many years, experienced flavourists are among the hardest technical professionals to recruit in the flavour and fragrance industry.
